Pumpkin Glazed Pumpkin Cookies

These soft pumpkin glazed pumpkin cookies are addicting. Almost more like a very soft scone or a muffin, they are a delicious treat without being overly sugary or rich. They were a staple fall treat in my house growing up, and Iā€™m happy to continue the tradition and share them with you.


The Recipe

FOR THE COOKIES:

1/2 c butter

1 1/2 c brown sugar, packed

2 eggs

1 c canned pumpkin

1 t vanilla

2 1/2 c flour

3 t baking powder

1 t salt

1 t cinnamon

1/2 t allspice

1/4 t ginger


FOR THE GLAZE:

1 1/4 c powdered sugar

2 T soft butter

1 t cinnamon

1/4 t allspice

3 T canned pumpkin


Preheat oven to 350 degrees Fahrenheit. Cream butter and sugar. Beat in eggs and pumpkin until light and fluffy. Stir in vanilla.

Measure dry ingredients and mix in a separate bowl. Add creamed mixture to make a soft dough.

Spoon onto a greased sheet and bake 12-15 minutes.

For the glaze: stir together ingredients till smooth. Spoon over the cookies after they come out of the oven, while they are still warm.
